Yesterday I had another go at practising for Christmas. I’m trying a few recipes out to to see what would make good vegan Christmas lunch. I found this recipe online, it looked really good so I thought I’d give it a whirl.
I won’t write the whole process out, the person who created the recipe has done a perfectly good job!
I’m cooking so much more since going vegan, and I’ve been surprised how enjoyable it has been just taking the time to cook food from scratch. This recipe was no exception, it felt creative and absorbing.
That said, I think this recipe was overcomplicated. There are a lot of ingredients, some of them a bit fiddly (did it really need ground flaxseed, whisked up in water?). It tasted very good, especially the glaze on top, but for the amount of ingredients and the time it took I was expecting something more. Don’t get me wrong, I really enjoyed eating this, and the combination of sweet and savoury was really good. I just think I will be able to make a simpler and tastier nut loaf at some point.
Love this! I’ll need to add it to my Christmas prep list, so many recipes to try out before the big day!
